Thanks for the post; I received both eggplant and BN squash in my CSA pick-up this week - so the timing was perfect. I used crimini mushrooms for both their texture and flavor. Time for a second bowl! ~chris

I must confess it is the loss of a great friend. I too am very sad to hear this news, even though I haven't had a subscription to them for a few years. Decided to try Bon Appetit. I feel like I was part of the problem that caused the demise of a icon in food. RIP Gourmet.

I flipped through the new Bon Appetit this morning, and while it always has some good recipes, the sophistication just isn't there... with the writing or the photos!

I almost wish that we could all gather somewhere in person and give Gourmet Magazine a proper memorial service... but I suppose that's what's happening the world over in digital form.

I just finished baking this recipe and all I can say is - WOW! I have tried so many whole wheat zucchini bread recipes that are not even comparable. I didn't use coconut oil, but 1/4 of applesauce (made in a food processor with 1 apple) and instead of all maple syrup, I used 1 cup of molasses and 1/4 of maple syrup. I also only made 1 loaf and the rest a dozen muffins. I am so amazed at how moist it came out!
